The Taste of André Dokter's little sister

It all started years ago by the water in Briltil, near Zuidhorn. Steakhouse André Dokter was born and quickly became a household name in that region. If it worked in Briltil, it was sure to be a success in the city of Groningen as well. And so, in 2016, the sister establishment was opened on Oosterstraat: André Dokter's little sister was born. (By now, Bert Wiegmink & Eliza Maerman have been the owners of the little sister for a few years, ed.)

Runners

Spareribs, satay, and homemade mayonnaise. After all these years, these are still the bestsellers on the menu. The little sister is open six days a week and is almost always fully booked. On weekdays it is often pleasantly busy, while on weekends the meat sells like hotcakes and double shifts are often worked.

Aging cabinet

As far as the menu is concerned, the two restaurants do not differ that much. The main focus remains meat; that is what Dokter’s businesses became ‘big’ with. And we are talking about really good meat. According to them, the ‘very best meat’. Upon entering, you can already see it hanging in the aging cabinet. They age the meat for periods ranging from 14 to as many as 50 days. During aging, the moisture in the meat evaporates, and all the flavor moves to the center. This ultimately creates a delicious taste sensation.

Culinary food bar

“If you would like something special that isn’t on the regular menu, we also have a dining bar,” says Sinninghe. “At that bar, you can enjoy a surprise menu of 6, 7, or 8 courses on Thursdays, Fridays, and Saturdays. You simply indicate what you don’t like, and Chef Jeroen will create a fantastic menu to match.” For wine lovers, a specially curated wine pairing is also available. “It’s a bit like a Chef’s Table concept, but at the bar,” adds Sinninghe. “The nice thing about this is that it appeals to a slightly different target audience: people who really love surprises.”

Nice and accessible

According to Sinninghe, what makes De Zusje unique is truly the living room feel you get as soon as you enter the place. ‘It is atmospheric here; it exudes a bit of the feel of a traditional pub. It is quite low-key, and that is also why most guests feel at home here quickly.’ Additionally, according to him, the strength of the concept is that the restaurant is accessible to everyone. So whether you want to grab a quick bite before going to the movies or enjoy an elaborate eight-course meal, it is all possible here.
