The Ravioli Bar, a little bit of happiness inside

Seasoned hospitality entrepreneur Robert Adams is launching a brand-new hospitality concept together with his partner Edwin Kuipers: De RavioliBar. A modern single product concept Linked to a wine bar. A menu with a focus on quality, loosely linked to Italy. Ravioli is a healthy alternative within the fast food segment. With many vegetarian options and a focus on sustainability. The first restaurant of a chain of twenty will open on September 29 at Vismarkt 20 in Groningen. The concept will be rolled out across the Netherlands within a few years.

The Ravioli Bar

“We came up with the idea for the RavioliBar because we had a very positive experience with handmade pasta on several occasions,” says Robert Adams. “In Italy, every region, every family, has its own recipe. Often passed down orally within the family. Usually, the grandmother is the proud keeper of ‘the one and only right’ recipe. And that’s how it has been for centuries. The handmade pasta is often prepared and eaten on Sundays and holidays. The whole family gathers for it. Moreover, what struck us is that it often involves stuffed pasta. Usually a form of ravioli. Filled with beautiful and honest ingredients. Ravioli is truly a celebration. Exactly what we have stood for for years,” adds Adams.

Happiness inside

Robert Adams: “Happiness inside is our motto,” adds Adams, “which naturally starts with the ravioli: The contents are sure to pleasantly surprise every visitor. But you will also be happy with a lively bar, where we explicitly combine in-store hospitality with takeaway. We envision a tapas-style way of dining: You order lovely antipasti, several small bowls of ravioli, and share them. A nice bottle of wine to go with it, a carafe of water—what more could you want? Nice and informal and affordable. A portion of ravioli costs between €6.50 and €8.50 with us.”

Multiple chains

“We deliberately choose prime retail locations – so not necessarily restaurant locations – with a lot of traffic,” Kuipers concludes, “in Groningen, for example, we are located a hundred meters from Herestraat, prominently on the Vismarkt. This ensures there is something to do at any time of day, where we also offer a menu tailored to every moment: from coffee to lunch; from drinks to dinner.”

Edwin Kuipers: “Just like the Italian nonne, we produce our top-quality ravioli ourselves. Combined with beautiful, matching wines, and voilà: The RavioliBar! The concept does not yet exist in the Netherlands, and the way we approach it – like a real bar – makes us unique worldwide. The restaurant in Groningen is the first of a chain of twenty that will be rolled out in the Netherlands in the coming years. We are already tentatively dreaming about a rollout in Germany, for example.”
