Restaurant Blumé launches a new pop-up concept: Souterrain 1634

Following the summer success of ’t Tuintje van Halbert, Restaurant Blumé surprises again with a unique temporary concept: Souterrain 1634. A pop-up restaurant for the modern flexitarian, opened in the characteristic basement of Hotel Corps de Garde at Oude Boteringestraat 74.

The historic location exudes atmosphere – the building dates back to 1634 and served at the time as a guardhouse for soldiers guarding the northern border of Groningen. It is now part of Garde Hotels, which renovated the building in 2021 into an alluring boutique hotel with a keen eye for detail and history.

Vegetables in the starring role

Chef Henrice Dijks (Restaurant Blumé) and Jarno Lucas (Hotel Corps de Garde) developed a refined menu together in which vegetables take center stage. Guests can choose from six creative vegetarian dishes, with the option to add a fish or meat supplement. The concept aligns perfectly with the growing trend of conscious and sustainable eating.
