It remains a great way to highlight the chef's specialty and thereby entice more guests to visit your establishment. Whether it involves preparing dishes at the table, a buffet with appetizers, or impressive desserts, it doesn't matter. Create an ‘offer they can’t refuse’ centered around this theme. Invite the local newspaper and influential food bloggers to a ‘press’ dinner, or share a recipe with the local paper. In any case, make it a celebration.
Some examples
The dessert library
For example, we have written about in the past restaurant Stay in DubaiHere, French 3-star chef Yannick Alléno is responsible for the menu. There is also a basic menu here, with the wait staff immediately explaining that the dessert can be chosen from the dessert library. Using a wavy meter, the chef prepares a meter-long dessert on the spot, based on what the guest points to.
Pie per inch
Also serving a meter cake like Auberge Saint-Gabriel What happened in Montreal in 2011 is one such opportunity to put a particular dish in the spotlight. Let your guests decide for themselves how many centimeters of cake they want!
Beef Stroganoff
But old-fashioned dishes that need to be prepared at the table are also an opportunity to showcase your chefs' talents to your guests. Recently, I was in Germany where an old-fashioned Boeuf Stroganoff was prepared at the table. It is always a treat to watch the chef's skills!
